Thank you! ^___^ The really hilarious part is I'd never used at least fifteen of these ingredients before I started working these out. I'd made griddle bread and paneer from scratch, so I could reuse what I knew about those, but the Indian spices and the tamarind and the chiles? No clue. Soooo... I grabbed some grapeseed oil (because it's so neutral), a skillet, and some saltines, and set about taste-testing everything. And then there was no looking back. (Bwahahaha.) :3
(I normally avoid chiles like the plague; I'm fine with kimchee and wasabi, but I really, really dislike jalapenos. But I found I liked serranos and anaheims and fingerhots much better than jalapenos, especially when seeded and simmered so that I could taste the fruit-flavor underneath the hot better... ^__^)
